Ingredients:

  • For the Cake:
    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 4 eggs
    • 3 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 cup buttermilk
    • 2 teaspoons vanilla extract
    • 1 cup chopped pecans
    • 1 cup chopped dates (optional)
  • For the Pecan Filling:
    • 1 cup brown sugar
    • 1/2 cup flour
    • 2 large eggs
    • 1/2 cup melted butter
    • 1 cup pecans, roughly chopped
  • For the Caramel Sauce:
    • 1 cup brown sugar
    • 1/2 cup heavy cream
    • 4 tablespoons unsalted butter
    • 1 teaspoon vanilla extract
    • Pinch of salt

Instructions:

  1. Prepare the Cake:
    • Preheat oven to 350°F (175°C). Grease and flour a bundt pan.
    • In a large mixing bowl, cream together butter and granulated sugar until light and fluffy.
    • Add eggs one at a time, beating well after each addition.
    • Mix in vanilla extract.
    • In another bowl, sift together flour, baking powder, and salt.
    • Gradually add the flour mixture to the creamed mixture alternately with buttermilk, starting and ending with the flour mixture.
    • Fold in chopped pecans and dates.
    • Pour half of the batter into the prepared bundt pan.
  2. Make the Pecan Filling:
    • In a separate bowl, combine brown sugar, flour, eggs, and melted butter, and stir until well blended.
    • Stir in chopped pecans.
    • Pour this filling over the batter in the bundt pan, then top with the remaining cake batter.
  3. Bake:
    • Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the cake comes out clean.
    • Allow to cool in the pan for about 10 minutes, then invert onto a wire rack to cool completely.
  4. Prepare the Caramel Sauce:
    • In a small saucepan over medium heat, combine brown sugar, heavy cream, and butter.
    • Bring to a boil, stirring constantly, and let boil for about 2 minutes.
    • Remove from heat and stir in vanilla extract and a pinch of salt.
    • Let the sauce cool slightly; it will thicken as it cools.
  5. Serve:
    • Drizzle caramel sauce over the cooled cake and garnish with additional pecans if desired.
