Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs (or digestive biscuits, crushed)
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter

For the Cheesecake Filling:

  • 1 1/4 cups cream cheese (at room temperature)
  • 1/2 cup granulated sugar
  • 1 cup heavy cream (cold)
  • 1 teaspoon vanilla extract
  • 1 can (15 oz) of peaches, diced (reserve some slices for topping)
  • 1 packet of unflavored gelatin (or 1 tablespoon powdered gelatin)
  • 1/4 cup hot water

For the Topping:

  • Sliced peaches (from the can or fresh)
  • Crushed nuts or graham cracker crumbs for garnish

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
    • Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
    • Chill the crust in the refrigerator while preparing the filling.
  2. Prepare the Gelatin:
    • In a small bowl, dissolve the unflavored gelatin in 1/4 cup of hot water. Stir until fully dissolved, then set aside to cool slightly.
  3. Make the Cheesecake Filling:
    • In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture.
    • Add the vanilla extract and dissolved gelatin to the mixture, stirring until fully combined.
  4. Add Peaches to the Filling:
    • Gently fold the diced peaches into the cheesecake filling. Make sure the pieces are evenly distributed throughout.
  5. Assemble the Cheesecake:
    • Pour the peach cheesecake filling over the chilled graham cracker crust and smooth the top with a spatula.
    • Arrange the reserved peach slices in a decorative pattern on top of the cheesecake.
  6. Chill the Cheesecake:
    • Refrigerate the cheesecake for at least 4 hours, or until fully set.
  7. Garnish and Serve:
    • Before serving, sprinkle the top with crushed nuts or additional graham cracker crumbs for texture. Slice and enjoy!
