No-Bake Peach Cheesecake Recipe
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs (or digestive biscuits, crushed)
- 1/4 cup granulated sugar
- 1/2 cup melted butter

- 1/4 cup hot water

- Sliced peaches (from the can or fresh)

Instructions:
- Prepare the Crust:
- In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a 9-inch springform pan to form an even layer.
- Chill the crust in the refrigerator while preparing the filling.
- Prepare the Gelatin:
- In a small bowl, dissolve the unflavored gelatin in 1/4 cup of hot water. Stir until fully dissolved, then set aside to cool slightly.
- Make the Cheesecake Filling:

- In a separate bowl, whip the heavy cream until stiff peaks form.

- Gently fold the diced peaches into the cheesecake filling. Make sure the pieces are evenly distributed throughout.
- Assemble the Cheesecake:
- Pour the peach cheesecake filling over the chilled graham cracker crust and smooth the top with a spatula.
- Arrange the reserved peach slices in a decorative pattern on top of the cheesecake.
