Italian Sausage and Pasta Soup Recipe
Ingredients:
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- 1 cup elbow macaroni or other small pasta
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
- Parmesan cheese, grated for serving
Instructions:
- Brown the Sausage:
- In a large pot, cook the Italian sausage over medium heat, breaking it apart with a spoon, until browned and cooked through. Remove the sausage with a slotted spoon and set aside.
- Sauté Vegetables:
- In the same pot, add a bit of oil if needed, then sauté the onions, carrots, and celery until softened, about 5 minutes. Add the garlic and sauté for another minute until fragrant.
- Simmer the Soup:
- Return the sausage to the pot along with the chicken broth, diced tomatoes, oregano, basil, and red pepper flakes. Bring to a boil, then reduce heat and simmer for about 15 minutes to let the flavors meld.
- Cook the Pasta:
- Add the pasta to the pot and cook according to package instructions until al dente, usually about 8-10 minutes.
- Season and Serve:
- Season the soup with salt and pepper to taste. Serve hot, garnished with chopped fresh parsley and grated Parmesan cheese.
