Homemade Fruit and Nut Granola Bars
Ingredients
- 2 cups rolled oats
- 1/2 cup shredded coconut (optional)
- 1/2 cup chopped almonds
- 1/2 cup chopped walnuts
- 1/4 cup honey or maple syrup
- 1/4 cup peanut butter or almond butter
- 1/4 cup dried apricots, chopped
- 1/4 cup dried prunes, chopped
- 1/4 cup raisins
- 1/4 cup dried cranberries or raspberries
- 1/2 tsp vanilla extract
- A pinch of salt

Step 1: Prepare the Ingredients
- Preheat your oven to 350°F (175°C).
- Line a baking dish with parchment paper, leaving extra on the sides for easy lifting.
Step 2: Toast the Dry Ingredients

- Spread the oats, shredded coconut, almonds, and walnuts on a baking sheet.
- Toast in the preheated oven for about 8-10 minutes, or until lightly golden and fragrant. Stir halfway through for even toasting.
Step 3: Mix Wet Ingredients
- In a saucepan, gently heat the honey (or maple syrup) and peanut butter (or almond butter) over low heat until smooth and well combined.
- Stir in the vanilla extract and a pinch of salt.
Step 4: Combine Ingredients
- In a large mixing bowl, combine the toasted oats, coconut, and nuts with the chopped dried fruits (apricots, prunes, raisins, cranberries).
- Pour the warm honey and peanut butter mixture over the dry ingredients, stirring well to coat everything evenly.
Step 5: Press and Chill
- Transfer the mixture to the lined baking dish.
- Use a spatula or the back of a spoon to press the mixture firmly and evenly into the dish.
- Place in the refrigerator for at least 2 hours (or overnight) to set.
Step 6: Slice and Serve
- Once set, lift the granola block out of the dish using the parchment paper.
- Cut into bars or squares with a sharp knife.
