  1. Spread the oats, shredded coconut, almonds, and walnuts on a baking sheet.
  2. Toast in the preheated oven for about 8-10 minutes, or until lightly golden and fragrant. Stir halfway through for even toasting.

Step 3: Mix Wet Ingredients

  1. In a saucepan, gently heat the honey (or maple syrup) and peanut butter (or almond butter) over low heat until smooth and well combined.
  2. Stir in the vanilla extract and a pinch of salt.

Step 4: Combine Ingredients

  1. In a large mixing bowl, combine the toasted oats, coconut, and nuts with the chopped dried fruits (apricots, prunes, raisins, cranberries).

Step 5: Press and Chill

  1. Transfer the mixture to the lined baking dish.
  2. Use a spatula or the back of a spoon to press the mixture firmly and evenly into the dish.
  3. Place in the refrigerator for at least 2 hours (or overnight) to set.

  1. Once set, lift the granola block out of the dish using the parchment paper.
  2. Cut into bars or squares with a sharp knife.
