Layered Cherry and Pistachio Dessert Recipe
Ingredients:
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/4 cup sugar
- For the Cream Cheese Layer:
- 2 cups cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped to soft peaks

- 2 cups fresh cherries, pitted and halved

Instructions:
- Prepare the Crust:
- Mix graham cracker crumbs, melted butter, and sugar in a bowl until well combined.
- Press the mixture firmly into the bottom of a springform pan or a glass dish. Chill in the refrigerator for at least 30 minutes to set.
- Make the Cream Cheese Layer:
- In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, and continue to beat until well combined.
- Gently fold in the whipped cream until the mixture is smooth. Spread over the chilled crust and return to the fridge.
- Cook the Cherry Layer:
- In a saucepan over medium heat, combine cherries, sugar, cornstarch, and lemon juice. Cook until the cherries release their juices and the mixture thickens, about 8-10 minutes. Let cool to room temperature, then chill.
- Assemble the Dessert:
- Once the cherry mixture is cool, spread it evenly over the cream cheese layer.
- Sprinkle chopped pistachios over the top and garnish with whole cherries.
- Chill and Serve:
- Refrigerate the dessert for at least 4 hours, or overnight, to allow the layers to set.
- When ready to serve, carefully remove the dessert from the pan if using a springform, or serve directly from the dish.
