Ingredients:

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup unsalted butter, melted
    • 1/4 cup sugar
  • For the Cream Cheese Layer:
    • 2 cups cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 cup heavy cream, whipped to soft peaks
  • For the Cherry Layer:
    • 2 cups fresh cherries, pitted and halved
    • 1/2 cup sugar
    • 1 tablespoon cornstarch
    • Juice of half a lemon
  • For the Topping:
    • Chopped pistachios
    • Additional whole cherries for garnish

Instructions:

  1. Prepare the Crust:
    • Mix graham cracker crumbs, melted butter, and sugar in a bowl until well combined.
    • Press the mixture firmly into the bottom of a springform pan or a glass dish. Chill in the refrigerator for at least 30 minutes to set.
  2. Make the Cream Cheese Layer:
    • In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, and continue to beat until well combined.
    • Gently fold in the whipped cream until the mixture is smooth. Spread over the chilled crust and return to the fridge.
  3. Cook the Cherry Layer:
    • In a saucepan over medium heat, combine cherries, sugar, cornstarch, and lemon juice. Cook until the cherries release their juices and the mixture thickens, about 8-10 minutes. Let cool to room temperature, then chill.
  4. Assemble the Dessert:
    • Once the cherry mixture is cool, spread it evenly over the cream cheese layer.
    • Sprinkle chopped pistachios over the top and garnish with whole cherries.
  5. Chill and Serve:
    • Refrigerate the dessert for at least 4 hours, or overnight, to allow the layers to set.
    • When ready to serve, carefully remove the dessert from the pan if using a springform, or serve directly from the dish.
