Ingredients:

  • 2 kg fresh pumpkin, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable stock
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Prepare the Pumpkin: Peel and cube the pumpkin.
  2. Cook the Vegetables: In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
