Roasted Pork Loin with Potatoes and Garlic

**Ingredients:**
– 1 (4-pound) boneless pork loin
– 2 tablespoons olive oil
– 1 tablespoon salt
– 1 teaspoon black pepper
– 1 tablespoon garlic powder
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 teaspoon paprika
– 4 cloves garlic, minced
– 4-5 large potatoes, peeled and cut into wedges
– 10-12 whole garlic cloves, peeled
– 1 large onion, sliced
– 2 sprigs fresh rosemary
– 2 sprigs fresh thyme
– 1 cup chicken broth
– 1/4 cup white wine (optional)
**Instructions:**
1. **Preheat Oven:**
– Preheat your oven to 375°F (190°C).
2. **Prepare Pork Loin:**
– In a small bowl, mix together the olive oil, salt, pepper, garlic powder, dried thyme, dried rosemary, paprika, and minced garlic.
– Rub the seasoning mixture all over the pork loin.

3. **Prepare Vegetables:**
– In a large roasting pan, arrange the potato wedges, whole garlic cloves, and sliced onion.
– Drizzle with a little olive oil and season with salt and pepper.
4. **Assemble:**
– Place the seasoned pork loin on top of the vegetables.
– Add the fresh rosemary and thyme sprigs around the pork.
– Pour the chicken broth (and white wine, if using) into the bottom of the pan.
5. **Roast:**
– Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature of the pork reaches 145°F (63°C).
– Baste the pork occasionally with the pan juices.
6. **Rest and Serve:**
– Remove the pork loin from the oven and let it rest for about 10-15 minutes before slicing.
– Serve the sliced pork with the roasted potatoes, garlic, and onions.
