Ingredients:

For the Meatballs:

  • 1 lb (450g) ground beef or a mix of beef and pork
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil for frying

For the Sauce:

  • 2 cups marinara sauce (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

For Assembly:

  • 4 sub rolls or hoagie rolls
  • 1 1/2 cups shredded mozzarella or provolone cheese
  • Fresh parsley or basil for garnish (optional)

Instructions:

  1. Prepare the Meatballs:
    • In a large bowl, mix together the ground beef, breadcrumbs, Parmesan, egg, minced garlic, parsley, oregano, salt, and pepper.
    • Roll the mixture into meatballs, about 1.5 inches in diameter.
  2. Cook the Meatballs:
    • Heat some olive oil in a large pan over medium heat.
    • Brown the meatballs on all sides, cooking for about 8-10 minutes until they are fully cooked through.
    • Remove the meatballs from the pan and set aside.
  3. Prepare the Marinara Sauce:
    • In the same pan, add a bit of olive oil and sauté the minced garlic until fragrant (about 1 minute).
    • Pour in the marinara sauce and add the dried basil and oregano. Simmer for 5-10 minutes until the sauce is warmed through.
  4. Combine the Meatballs and Sauce:
    • Add the cooked meatballs back into the sauce and let them simmer for another 5 minutes so they can absorb the flavors of the sauce.
  5. Assemble the Meatball Subs:
    • Preheat your oven to 375°F (190°C).
    • Slice the sub rolls in half (without cutting all the way through) and place them on a baking sheet.
    • Spoon 3-4 meatballs into each roll, along with a generous amount of sauce.
    • Top each sub with shredded mozzarella or provolone cheese.
  6. Bake the Subs:
    • Bake the subs in the oven for 5-7 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Remove from the oven and garnish with fresh parsley or basil, if desired.
    • Serve the meatball subs warm.

This hearty meatball sub is perfect for lunch or dinner, offering the classic combination of juicy meatballs, tangy marinara sauce, and melted cheese in a soft roll.
