Classic Meatball Sub
Ingredients:
For the Meatballs:

- 1 lb (450g) ground beef or a mix of beef and pork
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil for frying
For the Sauce:
- 2 cups marinara sauce (store-bought or homemade)
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
For Assembly:
- 4 sub rolls or hoagie rolls
- 1 1/2 cups shredded mozzarella or provolone cheese
- Fresh parsley or basil for garnish (optional)
Instructions:
- Prepare the Meatballs:
- In a large bowl, mix together the ground beef, breadcrumbs, Parmesan, egg, minced garlic, parsley, oregano, salt, and pepper.
- Roll the mixture into meatballs, about 1.5 inches in diameter.
- Cook the Meatballs:
- Heat some olive oil in a large pan over medium heat.
- Brown the meatballs on all sides, cooking for about 8-10 minutes until they are fully cooked through.
- Remove the meatballs from the pan and set aside.
- Prepare the Marinara Sauce:
- In the same pan, add a bit of olive oil and sauté the minced garlic until fragrant (about 1 minute).
- Pour in the marinara sauce and add the dried basil and oregano. Simmer for 5-10 minutes until the sauce is warmed through.
- Combine the Meatballs and Sauce:
- Add the cooked meatballs back into the sauce and let them simmer for another 5 minutes so they can absorb the flavors of the sauce.
- Assemble the Meatball Subs:
- Preheat your oven to 375°F (190°C).
- Slice the sub rolls in half (without cutting all the way through) and place them on a baking sheet.
- Spoon 3-4 meatballs into each roll, along with a generous amount of sauce.
- Top each sub with shredded mozzarella or provolone cheese.
- Bake the Subs:
- Bake the subs in the oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove from the oven and garnish with fresh parsley or basil, if desired.
- Serve the meatball subs warm.
