Honey Mustard Grilled Chicken Skewers with Couscous

 

 

 

Ingredients:

  • For the Chicken Skewers:
    • 4 boneless, skinless chicken breasts, cut into cubes
    • 1/4 cup honey
    • 1/4 cup Dijon mustard
    • 1 tablespoon soy sauce
    • 1 tablespoon lemon juice
    • 2 cloves garlic, minced
    • Salt and pepper to taste
    • Wooden or metal skewers
  • For the Couscous:
    • 1 cup couscous
    • 1 cup chicken broth
    • 1 tablespoon butter
    • 1/4 cup chopped parsley
    • Salt and pepper to taste

Instructions:

  1. Marinate the Chicken:
    • In a bowl, whisk together honey, Dijon mustard, soy sauce, lemon juice, minced garlic, salt, and pepper.
    • Add the chicken cubes to the marinade and toss to coat evenly.
    • Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  2. Prepare the Couscous:
    • Bring the chicken broth to a boil in a medium saucepan.
    • Stir in the couscous and butter. Remove from heat and cover.
    • Let stand for 5 minutes, then fluff with a fork.
    • Stir in chopped parsley, and season with salt and pepper to taste.
  3. Grill the Chicken:
    • Preheat the grill to medium-high heat.
    • Thread the marinated chicken cubes onto skewers.
    • Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is golden and cooked through.
  4. Serve:
    • Place the grilled chicken skewers over a bed of the prepared couscous.
    • Optionally, you can drizzle extra honey mustard sauce over the skewers for added flavor.
