Ingredients:

  • 1 bag of tortilla chips
  • 1 cup cooked ground beef or shredded chicken
  • 1 cup black beans, rinsed and drained
  • 1 large tomato, diced
  • 1 jalapeño, thinly sliced (optional)
  • 1/2 red onion, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Sour cream for topping
  • Guacamole for topping
  • Salsa for topping
  • Chopped cilantro for garnish
  • Lime wedges for serving

For the Nacho Cheese Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste

For the Spicy Cream Sauce:

  • 1/2 cup sour cream
  • 2 tablespoons hot sauce or to taste
  • Juice of 1/2 lime
  • Salt to taste

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375 degrees F (190 degrees C).
  2. Prepare the Cheese Sauce:
    • In a small pot, melt butter over medium heat. Stir in flour and cook for about 1 minute.
    • Gradually whisk in milk and continue cooking, whisking constantly until thickened.
    • Remove from heat and stir in cheddar cheese until melted. Season with salt and pepper.
  3. Prepare the Spicy Cream Sauce:
    • In a small bowl, mix together sour cream, hot sauce, lime juice, and salt. Adjust the seasoning and hot sauce to taste.
  4. Assemble the Nachos:
    • On a large ovenproof platter or baking sheet, spread out tortilla chips.
    • Evenly distribute the cooked meat, black beans, diced tomatoes, jalapeños, and red onions over the chips.
    • Drizzle with the prepared nacho cheese sauce and sprinkle both shredded cheeses over the top.
  5. Bake the Nachos:
    • Place in the oven and bake for 5-10 minutes, or until the cheese is melted and bubbly.
  6. Add Toppings:
    • Remove from the oven and add dollops of sour cream, guacamole, and drizzle with the spicy cream sauce.
    • Garnish with chopped cilantro and serve with lime wedges on the side.

  • Variations: Feel free to add other toppings like sliced black olives, corn, or even pineapple for a sweet touch.
  • Serving: Best served immediately while warm and crispy.
