Crispy Vegetable Fritters

 

 

 

Ingredients:

– 1 medium zucchini, grated
– 1 medium carrot, grated
– 2 eggs
– 1 cup shredded cheese (cheddar or mozzarella)
– 1/4 cup chopped green onions
– 1/2 cup all-purpose flour
– 1/2 tsp baking powder
– Salt and pepper, to taste
– 2-3 tbsp vegetable oil, for frying

Instructions:

 

1. **Prepare the Vegetables:**
– Grate the zucchini and carrot. Place them in a clean kitchen towel and squeeze out the excess moisture.
– In a large mixing bowl, combine the grated zucchini, grated carrot, shredded cheese, and chopped green onions.

2. **Prepare the Batter:**
– In a separate bowl, beat the eggs and then add them to the vegetable mixture.
– Add the flour, baking powder, salt, and pepper to the bowl. Mix until everything is well combined.

3. **Form the Fritters:**
– Heat the vegetable oil in a large skillet over medium heat.
– Take small portions of the mixture and form them into patties or logs.
– Carefully place the fritters in the hot oil, being careful not to overcrowd the skillet.

4. **Cook the Fritters:**
– Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
– Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
