Hearty Italian Meat and Pasta Stew Recipe
Ingredients:
- 1 lb ground beef or Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and cubed
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or chicken broth
- 1 cup water
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup dry pasta (like lasagna noodles broken into pieces or other short pasta)
- Fresh parsley, chopped (for garnish)

- Brown the Meat: In a large pot, cook the ground beef or sausage over medium-high heat until browned. Drain any excess grease.
- Sauté Vegetables: Add the onion, garlic, bell pepper, and carrots to the pot. Cook until the vegetables are softened, about 5 minutes.
- Add Potatoes and Seasonings: Stir in the potatoes, canned tomatoes, beef or chicken broth, water, basil, oregano, salt, and pepper. Bring to a boil.
- Simmer the Stew: Reduce heat to low and let simmer, covered, for about 20 minutes, or until the potatoes are tender.
- Add Pasta: Add the pasta to the pot and cook until al dente, about 10-12 minutes depending on the pasta used.
- Garnish and Serve: Check the seasoning, adjust if necessary, and garnish with fresh parsley before serving.
This stew is perfect for a comforting meal and can be easily adjusted to include your favorite vegetables or spices. Serve it hot, ideally with a side of crusty bread to soak up the delicious broth!
