Pancake Sausage Casserole
Golden layers of fluffy pancakes stacked with savory sausage and drenched in maple syrup—this easy breakfast casserole is a crowd-pleasing favorite that blends sweet and savory in every bite.
Ingredients:
- 2 cups pancake mix
- 1 ¼ cups milk
- 1 large egg
- ½ teaspoon vanilla extract (optional)
- 1 pound breakfast sausage (crumbled)
- Butter for greasing pan
- Maple syrup, for serving
Instructions:
- Cook the sausage: In a skillet over medium heat, cook the crumbled breakfast sausage until fully browned and cooked through. Drain excess grease and set aside.
- Prepare the pancake batter: In a mixing bowl, whisk together the pancake mix, milk, egg, and vanilla extract (if using) until smooth and lump-free. Let the batter rest for 5 minutes.
- Make the pancakes: Heat a nonstick pan or griddle over medium heat and lightly grease with butter. Pour batter to form medium or large pancakes (about the size of your casserole dish). Cook for 2–3 minutes per side until golden brown. Make 4–5 pancakes total.
- Layer the casserole: Preheat oven to 350°F (175°C). In a buttered baking dish, place a pancake at the bottom, top with a generous layer of cooked sausage, and repeat the layers until all pancakes and sausage are used, ending with a pancake on top.
- Warm in the oven: Bake the casserole uncovered for 10–15 minutes, just to heat through and let the layers set.
- Serve: Cut into squares and drizzle generously with warm maple syrup. Serve immediately for a rich and comforting breakfast!
