Grilled Chicken with Vegetable Fried Rice and Coleslaw

**Ingredients:**
– 4 pieces of chicken (thighs, drumsticks, or breast)
– 2 tbsp olive oil
– 2 tbsp tomato paste
– 1 tsp paprika
– 1 tsp garlic powder
– 1 tsp onion powder
– 1 tsp dried thyme
– 1 tsp dried oregano
– Salt and pepper, to taste
– 1 lemon (optional, for marinating)
**Instructions:**
1. **Marinate the Chicken:**
– In a bowl, mix olive oil, tomato paste, paprika, garlic powder, onion powder, thyme, oregano, salt, and pepper.
– Rub the mixture all over the chicken pieces. If using, squeeze lemon juice over the chicken and let it marinate for at least 30 minutes, or overnight for best results.
2. **Grill the Chicken:**
– Preheat your grill or oven to 400°F (200°C).
– Grill the chicken for 20-25 minutes on each side, or until fully cooked and the skin is crispy. The internal temperature should reach 165°F (74°C).
