Grilled Cheese with Tomato and Herbs
Ingredients

– 4 slices of bread (sourdough, Italian, or your preferred type)
– 2 tablespoons butter, softened
– 1 cup mozzarella cheese, shredded (or sliced)
– 1 large tomato, thinly sliced
– 1 teaspoon dried oregano or Italian seasoning
– Salt and pepper, to taste
– Optional: fresh basil leaves or other herbs
Instructions
1. **Prepare the Ingredients:**
– Spread butter on one side of each slice of bread.
– If using fresh herbs like basil, chop them finely.
2. **Assemble the Sandwich:**
– Place a slice of bread, buttered side down, on a cutting board or plate.
– Sprinkle half of the mozzarella cheese evenly over the bread.
– Layer tomato slices on top of the cheese.
– Season with salt, pepper, and a pinch of oregano or Italian seasoning.
– Add any fresh herbs if using.
– Top with the remaining mozzarella cheese.
– Place the second slice of bread on top, buttered side up.
3. **Cook the Sandwich:**
– Heat a non-stick skillet over medium heat.
– Place the assembled sandwich in the skillet.
– Cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.

– Remove from the skillet and let it cool for a minute.
– Cut in half and serve warm.
