Fluffy Pancakes

 

 

Ingredients:

– 1 1/2 cups all-purpose flour
– 3 1/2 tsp baking powder
– 1 tsp salt
– 1 tbsp granulated sugar
– 1 1/4 cups milk
– 1 egg
– 3 tbsp unsalted butter, melted
– 1 tsp vanilla extract (optional)

Instructions:

1. **Prepare the batter:**
– In a large bowl, sift together the flour, baking powder, salt, and sugar.
– Make a well in the center and pour in the milk, egg, melted butter, and vanilla extract (if using). Mix until smooth. The batter should be thick and free of lumps.

2. **Heat the griddle:**
– Heat a lightly oiled griddle or non-stick frying pan over medium-high heat.

3. **Cook the pancakes:**
– Pour or scoop about 1/4 cup of batter for each pancake onto the griddle.
– Cook until bubbles form on the surface of the pancake and the edges look set, then flip with a spatula and cook until browned on the other side.
– Repeat with the remaining batter, oiling the griddle as needed.

4. **Serve:**
– Serve the pancakes warm with your favorite toppings, such as butter, syrup, fresh fruit, or whipped cream.
