Ingredients:
– 4 white fish fillets (such as cod, halibut, or haddock)
– Salt and pepper to taste
– 2 tablespoons olive oil
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 can (14.5 oz) diced tomatoes
– 1 cup cherry tomatoes, halved
– 1/2 cup chicken or vegetable broth
– 1 teaspoon dried oregano

1. **Season the Fish**: Pat the fish fillets dry with paper towels and season both sides with salt and pepper.
2. **Sear the Fish**: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the fish fillets and cook for 2-3 minutes on each side, or until golden brown. Remove the fish from the skillet and set aside.
