– **For the Steak:**
– 4 filet mignon steaks (about 6 oz each)
– Salt and freshly ground black pepper
– 2 tablespoons olive oil
– 2 tablespoons butter
– Fresh herbs (like thyme or rosemary), optional for basting

– **For the Scallops:**
– 8 large sea scallops
– Salt and freshly ground black pepper
– 2 tablespoons olive oil
– 1 tablespoon butter

– **For the Herb Cream Sauce:**
– 1 cup heavy cream
– 1/4 cup white wine (optional)
– 2 tablespoons Dijon mustard
– 1 tablespoon fresh dill, chopped (or parsley)
– 1 tablespoon fresh chives, chopped
– Salt and pepper to taste

**Instructions:**

1. **Prepare the Steak:**
– Season the filet mignon steaks generously with salt and pepper.
– Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the steaks and sear for 2-3 minutes on each side until a nice crust forms.
– Add the butter and fresh herbs (if using) to the pan, and baste the steaks by spooning the melted butter over them.
– Transfer the skillet to a preheated oven at 400°F (200°C) and cook for 5-7 minutes or until the steaks reach your desired doneness (125°F for medium-rare).
– Remove the steaks from the skillet and let them rest.

2. **Prepare the Scallops:**
– Pat the scallops dry with paper towels and season with salt and pepper.
– In the same skillet (or a separate one), heat the olive oil over medium-high heat. Once hot, add the scallops and sear for 2 minutes on each side until they are golden brown and cooked through.
– Add the butter to the pan in the last minute of cooking to enhance the flavor.

3. **Make the Herb Cream Sauce:**
– In a small saucepan, combine the heavy cream and white wine (if using). Bring to a gentle simmer over medium heat.
– Stir in the Dijon mustard and fresh herbs, and cook for 3-4 minutes until the sauce thickens slightly.
– Season with salt and pepper to taste.

4. **Assemble the Dish:**
– Place the cooked filet mignon steaks on a serving plate.
– Top each steak with a seared scallop.
– Drizzle the herb cream sauce over the steaks and scallops.
– Garnish with extra fresh herbs if desired.

5. **Serve:** Pair this dish with your favorite sides, such as roasted potatoes, steamed asparagus, or a fresh salad.
