Ingredients:

  • 2 large eggplants
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup pizza sauce or marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Assorted toppings (e.g., sliced mushrooms, cherry tomatoes, black olives, bell peppers, etc.)
  • Fresh basil or parsley for garnish

Instructions:

  1. Prepare the Eggplant:
    • Preheat the oven to 400°F (200°C).
    • Slice the eggplants lengthwise into 1/2-inch thick slices.
    • Place the eggplant slices on a baking sheet lined with parchment paper.
    • Drizzle both sides of the eggplant slices with olive oil and season with paprika, garlic powder, salt, and black pepper.
  2. Bake the Eggplant:
    • Bake the eggplant slices for 15-20 minutes, until they are tender but not mushy. This will help remove excess moisture from the eggplant.
  3. Add the Toppings:
    • Remove the baked eggplant slices from the oven.
    • Spread a thin layer of pizza or marinara sauce over each slice.
    • Sprinkle shredded mozzarella cheese over the sauce.
    • Add your preferred pizza toppings (e.g., cherry tomatoes, mushrooms, black olives, bell peppers, etc.).
  4. Bake Again:
    • Return the eggplant pizzas to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve:
    • Once out of the oven, garnish the eggplant pizzas with fresh basil or parsley.
    • Serve immediately and enjoy!
