Classic Vegetable Soup

 

 

 

 

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 large potato, peeled and cubed
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/2 cup peas (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1-2 cups fresh spinach or kale, chopped
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add Garlic and Potatoes: Add the minced garlic and cubed potatoes to the pot. Sauté for an additional 1-2 minutes.
  3. Add Broth and Tomatoes: Pour in the vegetable broth and add the canned tomatoes with their juice. Stir well.
  4. Season the Soup: Add the dried thyme, dried basil, salt, and pepper. Bring the soup to a boil, then reduce the heat to a simmer.
  5. Add Remaining Vegetables: Add the zucchini, green beans, corn, and peas. Let the soup simmer for 15-20 minutes, or until all the vegetables are tender.
  6. Add Greens: Stir in the fresh spinach or kale and let it cook for an additional 2-3 minutes until wilted.
  7. Serve: Ladle the soup into bowls, garnish with fresh parsley, and serve warm.
