Easy Chocolate Mousse

Ingredients:
– 200g (7 oz) dark chocolate (70% cocoa), chopped
– 3 large eggs, separated
– 3 tablespoons granulated sugar
– 1 teaspoon vanilla extract
– 1 ½ cups (360 ml) heavy cream, cold
Instructions:
1. **Melt the Chocolate:**
– Place the chopped dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method). Stir until the chocolate is fully melted and smooth. Remove from the heat and let it cool slightly.

2. **Prepare the Egg Yolks:**
– In a large bowl, whisk together the egg yolks, sugar, and vanilla extract until the mixture becomes thick and pale.
3. **Combine with Chocolate:**
– Gradually add the melted chocolate to the egg yolk mixture, stirring continuously until fully incorporated.
4. **Beat the Egg Whites:**
– In a separate clean bowl, beat the egg whites until they form soft peaks. Gently fold the egg whites into the chocolate mixture in three parts, being careful not to deflate the mixture.
5. **Whip the Cream:**
– In another bowl, whip the cold heavy cream until it holds soft peaks. Reserve a small portion for topping if desired.
6. **Combine the Mixtures:**
– Gently fold the whipped cream into the chocolate mixture until no streaks remain. Be careful not to overmix.

– Spoon the mousse into individual serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set.
