Crispy Beef and Cheese Rolls
**Ingredients:**
– 1 lb (450g) ground beef
– 1 cup shredded cheddar cheese
– 1/2 cup diced green bell pepper
– 1/2 cup diced onion
– 1 tsp garlic powder
– 1 tsp onion powder
– Salt and pepper to taste
– 1 package of egg roll wrappers
– Vegetable oil for frying
– Optional: diced jalapeños for an extra kick

**Instructions:**
1. **Prepare the Filling:**
– In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
– Add diced onion and green bell pepper to the skillet and cook until they soften, about 5 minutes.
– Season with garlic powder, onion powder, salt, and pepper. Stir well.
– Remove from heat and allow to cool slightly. Once cooled, mix in the shredded cheddar cheese (and jalapeños if using).
2. **Assemble the Rolls:**
– Lay an egg roll wrapper on a clean surface in a diamond shape.
– Place about 2 tablespoons of the beef mixture near the center of the wrapper.
– Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Use a little water to seal the edges if necessary. Repeat with remaining wrappers and filling.
3. **Fry the Rolls:**
– Heat about 2 inches of vegetable oil in a deep pan or skillet over medium-high heat.
– Once the oil is hot (around 350°F or 175°C), carefully place the rolls in the oil, seam side down.
– Fry until golden brown and crispy, about 3-4 minutes per side. Make sure not to overcrowd the pan.
– Remove with a slotted spoon and drain on paper towels.
4. **Serve:**
– Serve the rolls hot with your favorite dipping sauce, such as ranch, salsa, or sour cream.
