2. **Prepare the Sauce:**
– In a large skillet, heat the olive oil over medium heat.
– Add the minced garlic and chopped onion, and sauté until the onion becomes translucent and the garlic is fragrant (about 2-3 minutes).
– Stir in the red pepper flakes, smoked paprika, and black pepper. Cook for another minute to release the flavors.
– Add the tomato paste to the skillet, and cook for about 2-3 minutes, stirring constantly, until the tomato paste darkens in color.
3. **Make it Creamy:**
– Reduce the heat to low, and slowly pour in the heavy cream, stirring constantly until the sauce is well combined and smooth.
– Stir in the grated Parmesan cheese until it melts into the sauce.
– Add the fresh spinach leaves to the skillet, and cook until they wilt, stirring occasionally.
4. **Combine Pasta and Sauce:**
– Add the cooked rigatoni to the skillet with the sauce, tossing to coat the pasta evenly.
– If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.
– Taste and adjust seasoning with salt, if necessary.
5. **Serve:**
– Divide the creamy, spicy rigatoni into serving bowls.
– Garnish with extra Parmesan cheese and fresh basil or parsley, if desired.
– Serve hot and enjoy!
This dish is perfect for a comforting meal with a bit of a spicy kick. The creamy sauce pairs wonderfully with the rigatoni, and the spinach adds a nice touch of color and flavor.
