Ingredients:

  • 1 lb fresh mushrooms, sliced (any variety like button, cremini, or a mix)
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp all-purpose flour
  • Optional: A splash of white wine
  • For garnish: Sour cream and fresh parsley

Instructions:

  1. Cook the Mushrooms: In a large pot, heat the butter and olive oil over medium heat. Add the mushrooms and sauté until they are browned and have released their moisture, about 10 minutes.
  2. Add Aromatics: Add the diced onion and minced garlic to the pot. Cook until the onions are translucent and soft, about 5 minutes. If using, pour in a splash of white wine to deglaze the pot, scraping up any browned bits from the bottom.
  3. Thicken Soup: Sprinkle the flour over the mushrooms and stir to coat. Cook for another minute to remove the raw flour taste.
  4. Simmer: Add the broth and thyme. Bring the mixture to a boil, then reduce to a simmer. Simmer for about 15 minutes or until the soup has slightly thickened.
  5. Blend (Optional): For a smoother soup, use an immersion blender to puree the soup directly in the pot to your desired consistency.
  6. Add Cream: Stir in the heavy cream and warm through. Adjust seasoning with salt and pepper.
  7. Serve: Ladle the soup into bowls, and top each with a dollop of sour cream and a sprinkle of fresh parsley.
