“Winter Berry Cheesecake Delight”

 

Ingredients:
  • For the crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 6 tablespoons unsalted butter, melted
  • For the filling:
    • 2 cups cream cheese, softened
    • 1 cup sour cream
    • 1 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 2 large eggs
  • For the topping:
    • 1 cup mixed berries (such as strawberries, raspberries, and blueberries)
    • 1/2 cup berry preserves or jam
    • Powdered sugar for dusting

Instructions:

  1. Prepare the crust:
    • Preheat your oven to 350°F (175°C).
    • Mix graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture into the bottom of a 9-inch springform pan to form a crust.
    • Bake for 8 minutes, then remove from the oven and let it cool.
  2. Make the filling:
    • In a large bowl, blend the cream cheese, sour cream, sugar, and vanilla extract until smooth.
    • Add eggs one at a time, mixing on low speed just until blended.
    • Pour the filling over the crust.
  3. Bake the cheesecake:
    • Bake for 50 minutes or until the center is almost set.
    • Turn off the oven, open the door slightly, and let the cheesecake sit in the oven for 1 hour.
    • Remove from the oven and let cool completely in the pan.
  4. Prepare the topping:
    • If using fresh berries, rinse and dry them. If using frozen berries, thaw them out.
    • Warm the berry preserves slightly until pourable.
    • Arrange the berries on top of the cheesecake and drizzle with the warm preserves.
  5. Chill and serve:
    • Refrigerate the cheesecake for at least 4 hours or overnight.
    • Just before serving, dust with powdered sugar.
