“Winter Berry Cheesecake Delight”
Ingredients:
- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- For the filling:
- 2 cups cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- For the topping:
- 1 cup mixed berries (such as strawberries, raspberries, and blueberries)
- 1/2 cup berry preserves or jam
- Powdered sugar for dusting
Instructions:
- Prepare the crust:
- Preheat your oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form a crust.
- Bake for 8 minutes, then remove from the oven and let it cool.
- Make the filling:
- In a large bowl, blend the cream cheese, sour cream, sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing on low speed just until blended.
- Pour the filling over the crust.
- Bake the cheesecake:
- Bake for 50 minutes or until the center is almost set.
- Turn off the oven, open the door slightly, and let the cheesecake sit in the oven for 1 hour.
- Remove from the oven and let cool completely in the pan.
- Prepare the topping:
- If using fresh berries, rinse and dry them. If using frozen berries, thaw them out.
- Warm the berry preserves slightly until pourable.
- Arrange the berries on top of the cheesecake and drizzle with the warm preserves.
- Chill and serve:
- Refrigerate the cheesecake for at least 4 hours or overnight.
- Just before serving, dust with powdered sugar.
