Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 large potato, peeled and cubed
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Fresh dill, for garnish

Instructions:

  1. Heat the Olive Oil:
    • In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  2. Add Vegetables:
    • Add the diced carrots, celery, and cubed potatoes to the pot. Stir to combine and cook for about 5 minutes, just until the vegetables start to soften.
  3. Pour in the Broth:
    • Pour in the vegetable broth and add the dried thyme and bay leaf. Bring the mixture to a boil.
  4. Simmer:
    • Once boiling, reduce the heat to a simmer and cover the pot. Let it cook for about 20-25 minutes, or until the vegetables are tender.
  5. Season and Serve:
    • Remove the bay leaf, and season the soup with salt and pepper to taste. Serve hot, garnished with fresh dill.
