Ingredients:
  • Crust:
    • 1 1/2 cups all-purpose flour
    • 1/2 cup butter, softened
    • 1/4 cup powdered sugar
  • Filling:
    • 1 cup granulated sugar
    • 2 cups shredded sweetened coconut
    • 2 eggs
    • 2 tablespoons all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
  • Topping:
    • 1/4 cup powdered sugar (for dusting)
    • Extra shredded coconut (optional, for garnish)

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • Mix 1 1/2 cups flour, butter, and 1/4 cup powdered sugar until well combined.
    • Press the mixture into the bottom of an ungreased 9×13 inch baking dish.
    • Bake for 15 minutes until the edges are slightly golden. Remove from oven and let cool slightly.
  2. Make the Filling:
    • In a medium bowl, whisk together eggs and granulated sugar until smooth.
    • Add 2 tablespoons flour, baking powder, salt, and vanilla extract. Mix well.
    • Stir in the shredded coconut.
    • Pour this filling over the baked crust and spread evenly.
  3. Bake:
    • Return to the oven and bake for an additional 25 minutes, or until the top is set and edges are lightly browned.
  4. Finish and Serve:
    • Let the bars cool in the pan.
    • Dust with powdered sugar and sprinkle additional shredded coconut on top if desired.
    • Cut into bars once completely cooled.
