Basic Sponge Cake:
Ingredients:
- 4 large eggs
- 1 cup (200g) granulated sugar
- 1 cup (120g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup (60 ml) milk
- 4 tablespoons (60g) unsalted butter
Instructions:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
- Mix Dry Ingredients:
- Sift together the flour, baking powder, and salt. Set aside.
- Beat Eggs and Sugar:
- In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer on high speed until the mixture is pale, fluffy, and triples in volume. This may take about 5-7 minutes.
- Add vanilla extract and mix until combined.
- Combine Dry and Wet Ingredients:
- Gradually fold the dry ingredients into the egg mixture using a spatula, taking care not to deflate the mixture.
- In a small saucepan, heat the milk and butter together just until the butter melts. Do not let it boil.
- Quickly fold the warm milk mixture into the batter.
- Bake:
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Cool and Serve:
- Remove the cake from the oven and allow it to cool in the pan for 10 minutes.
- Turn out onto a wire rack to cool completely.
- Once cool, the sponge cake can be frosted, layered with fruits and cream, or served as is with a dusting of powdered sugar.
