Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter or vegetable oil
  • Optional: 1 teaspoon vanilla extract for added flavor

Instructions:

  1. Mix Dry Ingredients:
    • In a large bowl, sift together the flour, baking powder, sugar, and salt.
  2. Combine Wet Ingredients:
    • In another bowl, beat together the milk, egg, and melted butter (and vanilla extract if using).
  3. Make Pancake Batter:
    • Pour the wet ingredients into the dry ingredients and stir just until mixed. The batter should be slightly lumpy; this is key to making fluffy pancakes.
  4. Cook the Pancakes:
    • Heat a skillet or griddle over medium-high heat and lightly grease it with butter or oil.
    • Pour or scoop the batter onto the skillet, using approximately 1/4 cup for each pancake.
    • Cook until the surface of the pancakes have some bubbles and a few have burst, about 1-2 minutes.
    • Flip with a spatula, and cook until browned on the underside, 1 to 2 minutes more.
  5. Serve:
    • Serve hot with your favorite toppings such as syrup, fresh fruits, or whipped cream.
