Classic Beef Bourguignon

 

 

 

Ingredients:

  • 2 lbs beef chuck, cut into 2-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup all-purpose flour
  • 3 tbsp olive oil
  • 4 slices bacon, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 lb mushrooms, sliced
  • 2 carrots, sliced
  • 1 bottle (750 ml) dry red wine, like Burgundy
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 bouquet garni (thyme, bay leaves, and parsley tied together)
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Prepare the Beef:
    • Pat the beef dry with paper towels and season generously with salt and pepper. Toss the beef cubes with flour to coat them lightly.
  2. Brown the Beef:
    • In a large Dutch oven or heavy pot, heat 2 tablespoons of olive oil over medium-high heat. Add the beef in batches, making sure not to crowd the pan, and brown on all sides. Remove the beef and set aside.
  3. Cook the Bacon and Vegetables:
    • In the same pot, add the bacon and cook until crispy. Add the remaining olive oil along with the onions and garlic, cooking until the onions are translucent.
    • Add the mushrooms and carrots, and sauté for about 5 minutes until they start to brown.
  4. Deglaze and Simmer:
    • Pour in the red wine, scraping up any browned bits from the bottom of the pan. Add the beef broth, tomato paste, and bouquet garni. Bring to a boil, then reduce to a simmer.
    • Return the beef to the pot, cover, and simmer gently for about 2 to 3 hours, or until the beef is tender.
  5. Final Touches:
    • Once the beef is tender, remove the bouquet garni. If the sauce is too thin, you can thicken it with a mixture of butter and flour (beurre manié) or let it simmer uncovered to reduce to the desired consistency.
    • Adjust seasoning with salt and pepper as needed.
  6. Serve:
    • Serve the beef bourguignon hot, garnished with chopped fresh parsley. It pairs beautifully with mashed potatoes, crusty bread, or over a bed of egg noodles.

  • Marinating: For an even deeper flavor, marinate the beef in the wine overnight with herbs and vegetables before cooking.
