1. **Prepare the Oven and Dish:**
– Preheat your oven to 350°F (175°C).
– Grease a 9-inch pie dish or baking dish with the unsalted butter.

2. **Prepare the Batter:**
– In a medium bowl, whisk together the flour, granulated sugar, and salt.
– In another bowl, beat the eggs until well blended. Add the milk, vanilla extract, and almond extract (if using) to the eggs and mix well.
– Gradually add the wet ingredients to the dry ingredients, whisking continuously until the batter is smooth and free of lumps.

3. **Assemble the Clafoutis:**
– Arrange the pitted cherries or other chosen fruits evenly in the greased baking dish.
– Pour the batter over the fruit, ensuring it is evenly distributed.

4. **Bake:**
– Bake in the preheated oven for 45-50 minutes, or until the clafoutis is puffed and golden brown, and a knife inserted into the center comes out clean.

5. **Cool and Serve:**
– Allow the clafoutis to cool slightly. It will deflate a bit as it cools, which is normal.
– Dust with powdered sugar before serving.
