Cinnamon Roll French Toast Roll Up
Ingredients:
For the Cinnamon Butter and Bread:
1/2 cup + 2 tablespoons unsalted butter, softened
1/4 cup light brown sugar
1 tablespoon cinnamon
8 slices thick, soft bread (crusts removed)
For the French Toast Mixture:
2 eggs
1/4 cup milk
1 teaspoon vanilla extract
For the Coating:
1/4 cup granulated sugar
1 teaspoon cinnamon
For the Cream Cheese Icing:
1-1/2 tablespoons unsalted butter, softened
1/2 cup cream cheese, room temperature
1/4 cup confectioners’ sugar
Instructions:
Step 1: Make Cinnamon Butter and Bread
In a small bowl, mix together 1/2 cup softened butter, light brown sugar, and cinnamon until combined.
Remove the crusts from the bread and use a rolling pin to flatten each slice into a thin sheet.
Spread a thin layer of the cinnamon butter mixture evenly on each slice. Roll each piece tightly to form a log.
Step 2: Prepare the French Toast Mixture
In a medium bowl, whisk together the eggs, milk, and vanilla extract.
Quickly dip each roll into the egg mixture, ensuring the entire roll is coated, but don’t soak it.
Step 3: Cook the Roll-Ups
Melt the remaining 2 tablespoons of butter in a skillet over medium heat.
Fry the rolls, turning occasionally, until golden brown and crispy on all sides, about 2-3 minutes per side.
Step 4: Coat the Rolls
Mix together the granulated sugar and cinnamon in a small bowl.
Once the rolls are fried, immediately roll them in the cinnamon-sugar mixture to coat them fully. Set aside on a serving plate.
Step 5: Make the Cream Cheese Icing
In a bowl, mix together the softened butter, cream cheese, and confectioners’ sugar until smooth and creamy.
Transfer the icing to a piping bag for easy drizzling, or serve in a small dish as a dip.
