Chicken Stir-Fried Noodles

 

 

 

 

Ingredients:

  • 200g thin noodles (e.g., rice noodles, egg noodles)
  • 300g chicken breast, cut into small pieces
  • 1 carrot, julienned
  • 1 cup of corn kernels
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Vegetable oil for cooking

Instructions:

  1. Prepare the Noodles:
    • Cook the noodles according to the package instructions until al dente, then drain and set aside. If using rice noodles, soaking them in warm water might be sufficient.
  2. Cook the Chicken:
    • Heat a splash of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the chicken pieces, season with salt and pepper, and stir-fry until they are fully cooked and slightly golden. Remove the chicken from the pan and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add a little more oil if needed. Sauté the garlic until fragrant.
    • Add the julienned carrots and corn, stir-frying until just tender.
  4. Combine Ingredients:
    • Return the chicken to the skillet with the vegetables. Add the cooked noodles and toss everything together.
  5. Season the Dish:
    • Pour the soy sauce, oyster sauce, and sesame oil over the noodles. Stir well to ensure all ingredients are evenly coated with the sauces. Adjust seasoning with salt and pepper if necessary.
  6. Final Touches:
    • Stir in the chopped green onions just before removing the skillet from the heat to keep them fresh and vibrant.
  7. Serve:
    • Serve the noodles hot, garnished with additional green onions or sesame seeds if desired
