- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped
- For the ganache:
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate, chopped
- For the topping:
- 1/2 cup chopped roasted peanuts or almonds
Instructions:
- Prepare the crust:
- Combine crushed graham crackers, melted butter, and sugar in a bowl. Press the mixture into the bottom of a springform pan. Chill in the refrigerator while preparing the filling.

- In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract; mix until well combined.
- Gently fold in the whipped cream until the mixture is smooth.
- Pour the filling over the crust and smooth the top with a spatula. Refrigerate for at least 4 hours, or until set.

- Allow the ganache to cool slightly until it thickens but is still pourable.
- Assemble the cake:
- Pour the ganache over the chilled cheesecake, spreading it to the edges so it drips down the sides.
- Sprinkle chopped nuts over the ganache.
- Chill the cheesecake in the refrigerator until ready to serve.
