Ingredients:

  • For the Steaks:
    • 4 steak cuts (such as ribeye, sirloin, or filet mignon)
    • Salt and black pepper
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 2 sprigs fresh thyme (optional)
  • For the Roasted Potatoes:
    • 4 large potatoes, halved
    • 2 tablespoons olive oil
    • Salt and black pepper
    • 1 teaspoon paprika
  • For the Creamy Sauce:
    • 1 tablespoon butter
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon Dijon mustard
    • 1 cup heavy cream
    • 1/2 teaspoon paprika
    • Salt and pepper to taste
    • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Potatoes:
    • Preheat the oven to 400°F (200°C).
    • Toss the potato halves with olive oil, salt, black pepper, and paprika.
    • Place them cut side down on a baking sheet.
    • Roast in the oven for about 40-45 minutes until tender and golden.
  2. Cook the Steaks:
    • Season the steaks generously with salt and pepper.
    • Heat olive oil in a skillet over medium-high heat.
    • Add the steaks and cook for about 4-5 minutes per side for medium-rare, or until desired doneness.
    • Add minced garlic and thyme in the last 2 minutes of cooking, basting the steaks with the infused oil.
    • Remove from heat and let rest.
  3. Make the Creamy Sauce:
    • In the same skillet, melt butter over medium heat.
    • Add onion and garlic, and sauté until soft and translucent.
    • Stir in Dijon mustard, then pour in the heavy cream. Add paprika.
    • Simmer until the sauce thickens slightly. Season with salt and pepper.
  4. Assemble the Dish:
    • Arrange the roasted potatoes on a serving plate.
    • Slice the rested steaks and place them over the potatoes.
    • Pour the creamy sauce over the steaks.
    • Garnish with chopped fresh parsley.
