Ingredients

Wet Ingredients:

  • 2 large ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup (60 ml) milk or plant-based milk
  • 2 tablespoons (30 ml) honey or maple syrup
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1 1/2 cups (150 g) rolled oats
  • 1/4 cup (25 g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup (50 g) dark chocolate chips (optional)

For Topping:

  • Melted dark chocolate (for drizzling)
  • Chopped pistachios or nuts (for garnish)

Instructions

Step 1: Prepare the Batter

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the eggs, milk, honey (or maple syrup), and vanilla extract. Mix well until combined.

Step 2: Mix the Dry Ingredients

  1. In another bowl, combine the rolled oats, cocoa powder, baking powder, baking soda, and salt.
  2. Gradually add the dry ingredients to the wet ingredients. Stir until everything is well incorporated. If using, fold in the chocolate chips for extra sweetness.

Step 3: Bake the Muffins

  1. Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  2. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  3. Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

  1. Drizzle melted dark chocolate over the top of each muffin.
