Chocolate Banana Oat Muffins Recipe
Ingredients
Wet Ingredients:
- 2 large ripe bananas, mashed
- 2 large eggs
- 1/4 cup (60 ml) milk or plant-based milk
- 2 tablespoons (30 ml) honey or maple syrup
- 1 teaspoon vanilla extract
Dry Ingredients:
- 1 1/2 cups (150 g) rolled oats
- 1/4 cup (25 g) unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup (50 g) dark chocolate chips (optional)
For Topping:
- Melted dark chocolate (for drizzling)
- Chopped pistachios or nuts (for garnish)
Instructions
Step 1: Prepare the Batter
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the eggs, milk, honey (or maple syrup), and vanilla extract. Mix well until combined.
Step 2: Mix the Dry Ingredients
- In another bowl, combine the rolled oats, cocoa powder, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients. Stir until everything is well incorporated. If using, fold in the chocolate chips for extra sweetness.
Step 3: Bake the Muffins
- Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Step 4: Add Toppings
- Drizzle melted dark chocolate over the top of each muffin.
- Sprinkle with chopped pistachios or your favorite nuts for an extra crunch and visual appeal.
Tips
- Use overripe bananas for maximum sweetness and flavor.
- Substitute oats with oat flour for a finer texture, or blend the rolled oats into a flour-like consistency before mixing.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
