Chilled Cucumber and Avocado Soup

Ingredients:
– 2 large cucumbers, peeled and chopped
– 1 ripe avocado, pitted and peeled
– 1 cup plain Greek yogurt
– 1/2 cup fresh dill or cilantro
– 1 clove garlic, minced
– Juice of 1 lime
– 1/4 cup olive oil, plus extra for garnish
– Salt and pepper to taste
– Optional: slices of cucumber and fresh herbs for garnish
Instructions:
1. **Blend the Ingredients:**
– In a blender, combine the chopped cucumber, avocado, yogurt, dill or cilantro, garlic, lime juice, and olive oil. Blend until smooth.
2. **Season:**
– Taste the soup and add salt and pepper to your preference. You can also adjust the lime juice or add more herbs if desired.
3. **Chill:**
– Transfer the soup to a bowl or container and refrigerate for at least 1 hour, or until thoroughly chilled.
4. **Serve:**
– Serve the soup in bowls. Garnish with a drizzle of olive oil, a few cucumber slices, and a sprinkle of fresh herbs. Enjoy!
