Ingredients:

  • 2 cups cooked chicken, shredded or chopped
  • 1/2 cup red grapes, halved
  • 1/4 cup almonds, sliced or slivered
  • 1/4 cup celery, chopped
  • 1/4 cup green onions, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Croissants, for serving
  • Lettuce leaves, optional for serving

  1. Mix the salad: In a large bowl, combine the chicken, grapes, almonds, celery, and green onions.
  2. Prepare the dressing: In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  3. Combine: Pour the dressing over the chicken mixture and gently stir to coat everything evenly.
