Chicken and Vegetable Soup with Egg Ribbons
Ingredients:
- 1 pound (450g) chicken thighs or breast (bone-in for extra flavor)
- 1 medium onion, chopped
- 2 medium carrots, peeled and grated or chopped
- 2 medium potatoes, peeled and diced
- 1/2 cup frozen peas
- 2 garlic cloves, minced
- 6 cups chicken broth or water
- 1-2 eggs, lightly beaten (for egg ribbons)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley or dill for garnish
Instructions:
- Cook the Chicken: In a large pot, add the chicken thighs or breast and cover with water or chicken broth (about 6 cups). Bring to a boil, then reduce the heat to a simmer and cook for about 20-25 minutes until the chicken is cooked through. Skim off any foam that rises to the top. Once done, remove the chicken, shred it, and set it aside.
- Sauté the Vegetables: In a separate pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent, about 3-5 minutes. Add in the grated or chopped carrots and cook for another 2-3 minutes. Add the paprika and mix well.
- Add Potatoes and Broth: Add the sautéed vegetables into the pot with the chicken broth. Add the diced potatoes and frozen peas. Simmer for 10-15 minutes until the potatoes are tender.
- Return Chicken to the Soup: Once the potatoes are cooked, return the shredded chicken to the soup and stir everything together. Season with salt and pepper to taste.
- Add Egg Ribbons: While the soup is gently simmering, slowly drizzle the beaten eggs into the soup while stirring gently. The eggs will cook almost immediately, forming delicate ribbons or scrambled bits throughout the soup.
- Garnish and Serve: Once the egg is cooked through, remove the soup from heat and serve in bowls. Garnish with freshly chopped parsley or dill.
