Cheesy Zucchini and Carrot Casserole
Ingredients:
- 2 medium zucchinis, shredded
- 2 medium carrots, shredded
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese (plus extra for topping)
- 1/2 cup grated Parmesan cheese
- 3 large eggs
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian herbs (optional)
- 1/4 cup olive oil or melted butter
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Grease a 9×9-inch baking dish or similar-sized casserole dish.
- Prepare the Vegetables:
- Shred the zucchini and carrots using a box grater or a food processor.
- Place the shredded zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible. This will help prevent the casserole from becoming too watery.
- Mix the Ingredients:
- In a large mixing bowl, combine the shredded zucchini, shredded carrots, chopped onion, and minced garlic.
