– 2 cups mashed potatoes (cooled)
– 1 cup shredded mozzarella or cheddar cheese
– 1/4 cup grated Parmesan cheese (optional)
– 1/4 teaspoon garlic powder
– 1/4 teaspoon onion powder
– Salt and pepper to taste
– 1/2 cup all-purpose flour
– 2 large eggs, beaten
– 1 cup breadcrumbs (plain or seasoned)
– Vegetable oil for frying
– Chopped parsley for garnish (optional)

**Instructions:**

1. **Prepare the Potato Mixture:**
– In a large bowl, combine the cooled mashed potatoes with the garlic powder, onion powder, salt, pepper, and Parmesan cheese (if using). Mix well to combine.

2. **Form the Balls:**
– Take a small amount of the potato mixture (about 1-2 tablespoons) and flatten it in your palm. Place a small amount of shredded cheese in the center, then gently wrap the potato mixture around the cheese, forming a ball. Repeat with the remaining potato mixture and cheese.

3. **Bread the Potato Balls:**
– Place the flour in a shallow dish, the beaten eggs in another, and the breadcrumbs in a third dish.
– Roll each potato ball first in the flour, then dip in the beaten eggs, and finally coat in the breadcrumbs, ensuring each ball is fully covered.

4. **Fry the Potato Balls:**
– Heat about 2 inches of vegetable oil in a large skillet or deep fryer over medium-high heat.
– Once the oil is hot (about 350°F or 175°C), carefully add the potato balls in batches, frying until they are golden brown and crispy on all sides, about 3-4 minutes.
– Use a slotted spoon to remove the potato balls from the oil and place them on a paper towel-lined plate to drain excess oil.

5. **Serve:**
– Garnish the crispy potato balls with chopped parsley if desired. Serve hot with your favorite dipping sauce, such as marinara, ranch, or sour cream.
