Ingredients:

**For the Cheese Balls:**
– 2 cups grated cheese (cheddar, mozzarella, or a mix)
– 1 cup mashed potatoes
– 1/2 cup finely chopped bell pepper (any color)
– 1/4 cup finely chopped green onions
– 2 cloves garlic, minced
– 1/2 tsp black pepper
– 1/2 tsp salt
– 1/2 tsp paprika
– 1/4 cup all-purpose flour
– 1 large egg, beaten
– 1 cup breadcrumbs
– Vegetable oil, for frying

**For the Spicy Dipping Sauce:**
– 1/2 cup mayonnaise
– 1/4 cup ketchup
– 1 tbsp hot sauce (or to taste)
– 1 tsp smoked paprika
– 1 tsp garlic powder
– 1 tsp onion powder
– 1 tbsp chopped fresh parsley (optional)

Instructions:

1. **Prepare the Cheese Balls:**
– In a large mixing bowl, combine the grated cheese, mashed potatoes, chopped bell pepper, chopped green onions, minced garlic, black pepper, salt, and paprika. Mix until well combined.
– Shape the mixture into small balls, about 1 inch in diameter.
– Roll each ball in the flour, then dip into the beaten egg, and finally coat with breadcrumbs.
– Place the prepared cheese balls on a baking sheet and refrigerate for about 30 minutes to firm up.

2. **Fry the Cheese Balls:**
– In a large skillet or deep fryer, heat the vegetable oil to 350°F (175°C).
– Fry the cheese balls in batches until golden brown and crispy, about 2-3 minutes per batch. Use a slotted spoon to remove the cheese balls from the oil and drain on paper towels.

3. **Prepare the Spicy Dipping Sauce:**
– In a small bowl, combine the mayonnaise, ketchup, hot sauce, smoked paprika, garlic powder, and onion powder. Mix until smooth.
– If desired, stir in the chopped fresh parsley for extra flavor.

4. **Serve:**
– Arrange the cheese balls on a serving platter and serve with the spicy dipping sauce on the side.
