1. **Prepare the Cheese Filling:**
– In a large bowl, combine the ricotta cheese, feta cheese, and grated mozzarella cheese.
– Beat the eggs and add them to the cheese mixture.
– Stir in the chopped parsley and season with salt and pepper to taste.
– Mix until all ingredients are well combined and the filling is smooth.
2. **Prepare the Phyllo Dough:**
– Preheat your oven to 375°F (190°C).
– Unroll the phyllo dough and cover it with a damp kitchen towel to prevent it from drying out.
– Take one sheet of phyllo dough and place it on a clean work surface.
– Brush it lightly with melted butter.
– Place another sheet of phyllo dough on top and brush it with butter. Repeat this process until you have layered 4-5 sheets of phyllo.
3. **Assemble the Pastries:**
– Cut the layered phyllo dough into rectangles or squares, depending on your preference.
– Place a spoonful of the cheese filling in the center of each rectangle.
– Fold the phyllo dough over the filling to form a neat package. You can fold it like an envelope or roll it up, as shown in the image.
– Place the filled pastries on a baking sheet lined with parchment paper.
– Brush the tops with more melted butter.
4. **Bake the Pastries:**
– Bake in the preheated oven for 20-25 minutes, or until the phyllo is golden brown and crispy.
5. **Serve:**
