Ingredients:

For the Custard:

  • 2 cups whole milk
  • 4 large egg yolks
  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

For the Parfait:

  • 1 cup fresh raspberries (or frozen, thawed)
  • 1/2 cup crushed graham crackers or vanilla wafer cookies
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Extra raspberries for garnish

Instructions:

  1. Make the Custard:
    • In a medium saucepan, heat the milk over medium heat until it starts to steam, but not boil.
    • In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
    • Slowly pour the hot milk into the egg mixture, whisking constantly to avoid curdling the eggs.
    • Pour the mixture back into the saucepan and cook over low heat, stirring continuously, until the custard thickens (about 5-7 minutes).
    • Remove from heat and stir in the vanilla extract. Let the custard cool slightly, then refrigerate until chilled.
  2. Whip the Cream:
    • In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Refrigerate until ready to use.
  3. Assemble the Parfait:
    • In tall glasses, start by adding a layer of raspberries at the bottom.
    • Spoon a layer of custard over the raspberries.
    • Add a layer of crushed graham crackers or vanilla wafer cookies.
    • Repeat the layers (raspberries, custard, and crushed cookies) until the glasses are almost full.
  4. Top with Whipped Cream:
    • Generously spoon or pipe whipped cream on top of each parfait.
    • Garnish with extra raspberries and a sprinkle of crushed cookies for a nice finish.
  5. Serve:
    • Serve immediately, or refrigerate for up to an hour before serving to keep the parfaits chilled.

This dessert is both refreshing and indulgent, with the sweet and tangy raspberries balancing the creamy custard and the light whipped cream. It’s perfect for any special occasion or just when you’re craving a fancy dessert!
