Blooming Quesadilla Ring
Ingredients
o 2 cups cooked, shredded chicken
o 1 onion, chopped
o 1 red pepper, chopped

o 1 jalapeño, chopped
o 1 cup taco sauce
o 20 taco-sized tortillas
o 3 cups shredded cheddar cheese
or 3 cups shredded Monterey jack cheese

. How to make a blooming quesadilla ring . Preheat the oven to 375˚F. Line a baking tray with baking paper. In a large bowl, add chicken, onion, red pepper, jalapeño, and taco sauce and toss to combine. Put aside.
Cut each tortilla in half.Evenly add about 2 tablespoons of Cheddar cheese, Monterey Jack cheese, and chicken mixture to each tortilla half.
Roll the tortillas into cones, starting at the cut edge and being careful not to remove the ingredients from the tortilla.
Place a wide-mouth glass or glass in the center of the baking tray.
Make a ring around the glass using about 13 tortilla cones. The tips of the cones should be in the middle and touching the glass.Sprinkle Cheddar and Monterey Jack cheese over the layer. Repeat with remaining cones to form two more layers, finishing with remaining cheddar and Monterey Jack cheese.

Remove the piston from the center of the ring. Bake for 15 to 20 minutes, until the cheese is melted and the edges of the tortillas are crispy.
Carefully transfer the green quesadilla to a serving platter.Add the sauce of your choice to the ring and garnish with any side dishes. Serve immediately
