Ingredients:

  • 1 lb ground beef or ground turkey
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 can (15 oz) mixed vegetables (or use frozen peas, corn, or green beans)
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Beef:
    • In a large skillet, cook the ground beef over medium heat until browned and fully cooked, about 6–8 minutes. Add the diced onion and minced garlic, and cook until the onion is soft and translucent, about 2–3 minutes. Drain excess grease if necessary.
  3. Prepare the Casserole Base:
    • Stir the cream of mushroom soup and milk into the ground beef mixture. Add salt and pepper to taste. Stir in the mixed vegetables.
  4. Assemble the Casserole:
    • Pour the beef and vegetable mixture into a greased 9×13-inch baking dish. Spread evenly.
    • Sprinkle the shredded cheddar cheese on top of the beef mixture.
    • Arrange the frozen tater tots in a single layer on top of the cheese.
  5. Bake:
    • Bake the casserole in the preheated oven for 30–35 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbly around the edges.
  6. Garnish and Serve:
    • Remove from the oven and garnish with fresh parsley if desired. Serve hot.
