– 1/2 tsp baking soda
– 1/4 tsp salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar

– 1 cup milk
– 2 large apples, peeled, cored, and diced
– 1/2 cup shredded coconut (optional)

– 1/4 cup powdered sugar
– 1/4 cup shredded coconut

1. **Preheat the Oven:**
– Preheat your oven to 350°F (175°C).
– Grease and flour a 9×9-inch (23×23 cm) baking pan or line it with parchment paper.

2. **Prepare the Cake Batter:**
– In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
– In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
– Beat in the eggs, one at a time, followed by the vanilla extract.
– Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
– Gently fold in the diced apples and shredded coconut (if using).

4. **Add the Topping:**
– Once the cake is completely cooled, sift the powdered sugar evenly over the top.
– Sprinkle the shredded coconut over the powdered sugar.
