Basic Sponge Cake:

 

 

 

Ingredients:

  • 4 large eggs
  • 1 cup (200g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup (60 ml) milk
  • 4 tablespoons (60g) unsalted butter

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×13 inch baking pan, or line it with parchment paper.
  2. Mix Dry Ingredients:
    • Sift together the flour, baking powder, and salt. Set aside.
  3. Beat Eggs and Sugar:
    • In a large mixing bowl, beat the eggs and granulated sugar with an electric mixer on high speed until the mixture is pale, fluffy, and triples in volume. This may take about 5-7 minutes.
    • Add vanilla extract and mix until combined.
  4. Combine Dry and Wet Ingredients:
    • Gradually fold the dry ingredients into the egg mixture using a spatula, taking care not to deflate the mixture.
    • In a small saucepan, heat the milk and butter together just until the butter melts. Do not let it boil.
    • Quickly fold the warm milk mixture into the batter.
  5. Bake:
    • Pour the batter into the prepared pan and smooth the top with a spatula.
    • Bake in the preheated oven for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  6. Cool and Serve:
    • Remove the cake from the oven and allow it to cool in the pan for 10 minutes.
    • Turn out onto a wire rack to cool completely.
    • Once cool, the sponge cake can be frosted, layered with fruits and cream, or served as is with a dusting of powdered sugar.
