Coconut Cream Bars
Ingredients:
- Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup butter, softened
- 1/4 cup powdered sugar
- Filling:
- 1 cup granulated sugar
- 2 cups shredded sweetened coconut
- 2 eggs
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Topping:
- 1/4 cup powdered sugar (for dusting)
- Extra shredded coconut (optional, for garnish)
Instructions:
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- Mix 1 1/2 cups flour, butter, and 1/4 cup powdered sugar until well combined.
- Press the mixture into the bottom of an ungreased 9×13 inch baking dish.
- Bake for 15 minutes until the edges are slightly golden. Remove from oven and let cool slightly.
- Make the Filling:
- In a medium bowl, whisk together eggs and granulated sugar until smooth.
- Add 2 tablespoons flour, baking powder, salt, and vanilla extract. Mix well.
- Stir in the shredded coconut.
- Pour this filling over the baked crust and spread evenly.
- Bake:
- Return to the oven and bake for an additional 25 minutes, or until the top is set and edges are lightly browned.
- Finish and Serve:
- Let the bars cool in the pan.
- Dust with powdered sugar and sprinkle additional shredded coconut on top if desired.
- Cut into bars once completely cooled.
