combines thinly sliced potatoes with a creamy sauce and spinach,

Ingredients:

  • 2 lbs potatoes (Yukon Gold or Russet), peeled and thinly sliced
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 lb fresh spinach, washed and roughly chopped
  • 2 cups heavy cream
  • 1 cup milk
  • 1 teaspoon nutmeg
  • 2 cups grated cheese (Gruyère, Cheddar, or a mix)
  • Salt and pepper to taste
  • Butter for greasing the dish

Instructions:

  1. Preheat Oven and Prepare Baking Dish:
    • Preheat your oven to 375°F (190°C).
    • Grease a large baking dish with butter.
  2. Prepare the Spinach Mixture:
    • In a large skillet, heat olive oil over medium heat.
    • Add the onion and garlic, sautéing until the onion is translucent.
    • Gradually add the spinach, cooking until it wilts. Season with salt, pepper, and a pinch of nutmeg. Set aside to cool slightly.
  3. Prepare the Cream Sauce:
    • In a saucepan, whisk together heavy cream, milk, remaining nutmeg, salt, and pepper.
    • Heat until just beginning to simmer, then remove from heat.
  4. Layer the Ingredients:
    • Begin by arranging a layer of potato slices at the bottom of the prepared dish. Season with a little salt and pepper.
    • Spread half of the spinach mixture over the potatoes.
    • Sprinkle a layer of cheese over the spinach.
    • Repeat the layers, finishing with a final layer of potatoes. Pour the cream mixture evenly over the top, ensuring it seeps into the layers.
    • Top with the remaining cheese.
  5. Bake:
    • Cover with foil and bake for 30 minutes.
    • Remove the foil and bake for another 30 minutes or until the top is golden and the potatoes are tender.
  6. Rest and Serve:
    • Let the dish stand for 10 minutes after baking to set the layers.
    • Cut into squares and serve warm, garnished with fresh herbs if desired.

Tips:

  • Slicing Potatoes: Use a mandoline slicer to get uniformly thin potato slices for even cooking.
  • Cheese Options: Experiment with different types of cheese for varying flavors and textures.
  • Additions: Incorporate mushrooms, leeks, or other vegetables to the layers for extra flavor and nutrition.

This potato and spinach gratin is perfect as a hearty main dish or a side to accompany meats or salads. Enjoy your meal!
